Pinoffee Pie

Last night we indulged in Nick's entry in the 2nd Round of the Anglo-Fijian Pudding-Off, a new twist on Banoffee Pie. Imagine a thick biscuit base, stacked with slices of caramelised pineapple and topped with coconut sauce. Nick had to do some serious improvisation when we discovered that the 1 litre pot of fresh cream we had purchased only half an hour previously had already gone off! Tasted like blue cheese. So, the ice cream component he had planned was replaced by a chilled sauce of fresh coconut cream and condensed milk. Some custardizing was also attempted.

It scored very highly on the presentation, enhanced I think by the pineapple top ("grotesque" Nick said). Unfortunately it was a bit too sweet overall, even by my standards. It scored 18/20 overall (10 from Nick, 8 from me). Next week is my turn...
